My Tre Colore Salad
It’s so simple, and such a good evening meal, I can’t not write it up.
Bocconcini, Roma tomatoes, Basil. Sliced into the same sized bits. Drizzled with virgin olive oil. And covered in a little salt and a lot of pepper.
Yummo! I should’ve taken a shot, because it looks so simple and good plated up. Next time…
Last night, I had it with some smoked salmon & avocado on some toasted Burgen bread covered in hot English mustard and cream cheese. A poor man’s Gravlax, it’s pretty much the perfect post-run meal for me, with all the ingredients available at the IGA near work.
